Summer Beet Soup

For those Lazy-Hazy-Crazy Days of Summer, I want to present this wonderfully refreshing cold summer soup. It is one of the staple food for summer in my household, especially during heat waves.

 

It is very easy to make, but it is a bit time-consuming since it has so many wonderful ingredients. I will not torture you with a lengthy introduction. 

 

So, for the base of this soup, you will need plain kefir, Selzer water, boiled or baked beets, honey, mustard, some lemon juice, salt and pepper to taste. 

You will also need cucumbers, red radishes, some scallions, some fresh herbs from your garden, and one hard-boiled egg per serving.

I grate beets with a fine grater into a large mixing bowl, add some honey and mustard to it, mix it well, and let the mixture sit on the kitchen counter for about half an hour. Finely grated beet mixture is pretty juicy, so honey and mustard dissolve well in it. Which is exactly what I need for my soup.


Meanwhile, I prepare the rest of the ingredients. I grate cucumbers with a large grater. I cut the radishes into small chunks or grate them as well, depending on my mood.

Finally, I cut my greens. I always leave some greens uncut for garnishing.

It is time to assemble my soup. Both kefir and Seltzer water come from the refrigerator, so my soup will be refreshingly cool. You may use mineral water instead of Seltzer water. But Seltzer water brings an interesting fizzing action to this soup. I also add some freshly squeezed lemon juice to this soup.

Mix everything well and put the soup into the individual bowls. One egg per person, cut in half. I put one tablespoon of sour cream in the middle of the bowl and garnish my soup with the remaining herbs.
